Easy Blueberry Popsicles

Popsicles are a summertime staple. A stroll through the frozen food section of your grocery store will almost always reveal brightly-colored packages of the sugary treat. When I heard that September is National Blueberry Popsicle Month, I couldn’t wait to try to make my own. Blueberries are awesome because they’re full of antioxidents. They’re high in nutrients while still being low in calories. Plus, they taste delicious! I love this recipe because it only requires four ingredients, which I typically already have on-hand. You could even hide a handful of spinach in there if you’re feeling extra healthy!

Popsicle Ingredients

I’m a big fan of smoothies for breakfast, but I don’t always have time to pull out the blender and ingredients in the morning. There are plenty of options for purchasing a smoothie, like from a coffeeshop or even a fast food place. The drive-through makes grabbing breakfast so easy during a morning commute. Who among us hasn’t been short on time and eaten a meal while driving?

Just because something is easy doesn’t mean it’s smart or safe. Eating a bagel or drinking a smoothie while driving to work in the morning may seem harmless, but it’s actually a form of distracted driving. Anything that takes your attention off the road is distracted driving and can increase your risk of collisions. According to the National Highway Traffic Safety Administration, distracted driving claimed 3,166 lives in 2017.

Obviously, tragedy doesn’t happen every single time we’re distracted on the road. When I was a new teen driver, I was always cautious on the road. Even so, I remember driving down a hill one day when I dropped my favorite lip balm on the passenger-side floor mat. There weren’t any cars around, and I really wanted to put on that lip balm, so I reached over to grab it. All of the sudden, I felt a bump, and when I looked up, my car was no longer on the road. It was in the grass! I was so shocked and embarrassed that I quickly manuevered back onto the road and didn’t mention the mishap to my parents. Even though there was no damage to myself, my vehicle, or anyone around me, there could have been. I was driving distracted and I could’ve hurt myself and others.

Some forms of distracted driving may seem more harmless than others, like eating breakfast versus texting, but the fact is, any distraction puts you and other roadways users at risk. That’s why I strive to minimize my distractions on the road. This brings us back to my blueberry popsicles. Like I said, I love a good breakfast smoothie, but they’re a lot of work in the morning. Popping through the coffeeshop drive-through on my commute is a great way to grab a smoothie, but it presents a distracted driving risk I’d rather not take a chance on. I’ve found this easy blueberry popsicle recipe to be a good solution! All I have to do is pop it out of the popsicle mold in the morning and enjoy it while I’m getting ready for the day.

Easy Blueberry Popsicles

Popsicle Finished

Prep Time: 15 minutes

Total Time: 6-24 hours

Servings: 4-6 popsicles

Ingredients

  • 1 cup blueberries (fresh or frozen)
  • 1/3 cup millk (I used almond milk, but any milk you prefer will work here!)
  • 1/2 cup plain greek yogurt
  • 1 tablespoon honey

Instructions

  1. Add all ingredients to a blender or food processor. Blend until smooth.
  2. Pour blended mixture into popsicle molds. Gently tap on counter to release any air bubbles.
  3. Freeze popsicles for at least 6 hours, or overnight.
  4. When you’re ready to enjoy your popsicles, run the mold under warm water for about ten seconds to release from the sides, and remove the popsicle carefully.
